I'm using my demo soccer season and I'm not sure about many things?
Who should I set as handlers, is it best to set defenseman, forwards or mf and
what are the disadvantages.
Also, how do I determine weather I want to use short, long or, one tuch passes?
What does the trap do?

You have to set positions, you don't have a choice there.
As for style of play, you might want to decide that soon- so you can build your
team around it.
Short passes- you are going to be making a number of short passes, so you want
intelligent control guys who can keep possession and patiently move down the
field.
One Touch- is in my opinion, a bit more balanced as you will need some guys who
have good ball control to take that quick pass.
Long ball- you want forwards who can boot the ball down the field and talented
enough forwards to control the pass and make something happen once they get it.
each has there advantages and disadvantages.

I think AJ misread part of your question, so-
Setting a player as a Handler means he will be more likely to advance the ball
by dribbling, just as setting him as a Passer means he will be more likely to
pass.
IMO, there are two things to consider in setting Handlers:
a) They need to have high ball control, especially if you are talking
defenders. You dont want a guy trying to dribble the ball out if he is likely
to make many turnovers in your defensive zone. Speed and Intelligence are also
handy attributes for handlers.
b) You need to take your style of play into consideration. If you are playing
one-touch or short passes, you want few handlers.
I would say the best position to set for handlers is defender, followed by
midfield, and only rarely would you have a forward set as a handler.
As for the trap-this is a defensive tactic that tries to draw the opposing
forwards offsides. It seems to work best when the opposition is playing a syle
that takes longer for the ball to advance, like short passes or one-touch. It
is riskier against long ball, since if the trap doesnt work, it often leaves
unmarked forwards in front of your goal.
